masterだけ区別がつけばいいですか?

Postfixの起動は実際には/etc/postfix/postfix-script で起動しているので、

start)
のところの

        $INFO starting the Postfix mail system
        $daemon_directory/master &

を、たとえば

        $daemon_directory/master -c /etc/postfix_25 &
        $daemon_directory/master -c /etc/postfix_11025 &

などとしてみればどうでしょう。

$ ps ax |grep master
16887 ?        Ss     0:00 /usr/lib/postfix/master -c /etc/postfix

のような表示になります。
