「sender_based_routing = yes」で、エンベロープ送信者をキーに 
transport_maps を検索することができます。ただし、ソース中に

	Sender-based routing does not work very well, because it has
	problems with sending bounces.

…とあるので、自己責任でどうぞ :-)

transport_maps じゃなくて、access(5) で FILTER を指定する方が良いかも
しれません。ldap じゃなくて hash であれば、

	[main.cf]
	smtpd_sender_restrictions = check_sender_access hash:/etc/postfix/sender_maps

	[sender_maps]
	foo@example.jp		FILTER:[XX.XX.XX.XX]

…とすれば、foo@example.jp からのメールは XX.XX.XX.XX に中継されるよう
な気がします。
